Japanese Jack Mackerel: 味のいい鰺



I received quite the treat this evening, some plump Tokyo Bay jack mackerel, courtesy of my fishing buddy and neighbour Mr. Bald Natto. Although they have been gutted and had their spiny lateral lines cut off, compare these Japanese jack mackerel to the photo of the ones I took in Toyama; they are rounder and fatter, smaller and their tails have a wonderful golden sheen to them. Tokyo Bay jack mackerel are prized among gourmands – and pick up a hefty price at market – for their rich oily flesh and delicate taste; I have yet to decide how to dispose of these, but be sure to check again in the near future as I will definitely post some photos.
