Something for the weekend

Homemade pasta: papardelle, made with egg.

Papardelle for me means a meat ragù.  I try to make the bolognese sauce fairly authentic using homemade pancetta, beef, pork, celery, carrots, wine and garlic.  It came out very well and wanted nothing more than a sprinkling of grated Parmesan cheese.

  1. I much prefer the wide pasta to spaghetti for a ragu sauce

  2. Hi sybaritica, thank you for visiting and posting. I believe the wider pasta is more authentic, to give the meat sauce something to stick to. My favourite is papardelle with wild boar sauce!
