Today’s pickles

I’ve recently started making my own Japanese pickles called nukazuke. This is a genuine charcuterie-style pickle as the vegetables are first salted, then buried in a culture containing some strains of Lactobacillus bacteria.  The brown mulch which harbours the bugs is the bran or hulls from rice.  Today’s pickles are a kind of Japanese turnip.
